A flavorful Za'atar Sourdough bread that pairs well with savory dishes. Made with a blend of bread flour and whole wheat flour, it features an active starter and a hint of zaatar spice, promising a unique taste and texture.
1: Autolyse flour and water for about 1 hour.
2: Add active starter and mix well. Rest for 20 minutes.
3: Add salt and mix well.
4: In between rests, perform 3 stretch and folds. Add in zaatar spice and perform 1-2 coil folds.
5: Bulk fermentation for 6-8 hours depending on temperature, until dough is bubbly and has increased by 50%.
6: Shape and cold retard for 12 hours.
7: Preheat Dutch oven at 480°F for at least 45 minutes, bake loaf inside Dutch oven for 20 minutes.
8: Remove loaf and place on a baking sheet, continue to bake for 15-20 minutes at 440°F to prevent burning at the bottom.
