Sable Breton Cookies

1: In a stand mixer with paddle attachment, beat together butter, sugar, salt, baking powder until light and fluffy.

2: Gradually add in egg yolks and vanilla bean paste while beating the batter until homogenous.

3: Weigh and divide the batter into 3 portions.

4: For the Orange cookie: Add the orange cookie flour mixture into the butter mixture and mix well. Spread the batter on parchment paper and roll it until about 1cm thick. Wrap with cling wrap and refrigerate for about 1 hour.

5: Repeat the same for earl grey and chocolate coffee cookie batter.

6: Preheat the oven to 340F.

7: Using a 4cm cookie cutter, stamp out the cookies and place them on a baking sheet lined with parchment paper.

8: Brush the cookie top with egg wash and refrigerate again for 10 minutes.

9: Before baking, brush the cookie top with egg wash one more time and score the cookie top with a fork.

10: Bake for about 22-24 minutes or until golden brown. Rotate the pan halfway through.

11: Once baked, remove from the oven and let them cool slightly before transferring to a cooling rack to cool completely.
