1: Mix bread flour and water until combined and set aside for 1 hour.
2: Add in active sourdough starter, mix well and rest for 20 minutes.
3: Mix in salt and mashed purple sweet potato until combined.
4: Perform 3 stretch and fold. Skip coil fold if dough is too stiff.
5: Let the dough bulk ferment for 6-7 hours depending on temperature until it's bubbly and has increased by 50%.
6: Shape the dough and cold retard for 12 hours.
7: Preheat the Dutch oven at 480°F for at least 45 minutes.
8: Bake the loaf inside the Dutch oven for 20 minutes.
9: Remove the loaf and place it on a baking sheet, continue to bake for another 15-20 minutes at 440°F to prevent burning.
