Peanut Butter Shortbread Cookie

Super versatile peanut butter shortbread cookie recipe that's not too sweet, a little savory, and offers a nice balance of sweet and salty. Can also be adapted into linzer cookies with jam for a pb&j flavor.
1. In a mixing bowl with paddle attachment, beat in butter and sugar until light and fluffy. Add in peanut butter and mix well. Add in egg and vanilla extract and beat until well combined.
2. In a separate bowl, sift flour, baking powder and sea salt. At the lowest speed, gradually add in the dry ingredients to the wet ingredients and mix well until there are no streaks of flour.
3. Divide the dough in 2 and place them on a floured surface and shape them into a disc. Chill the dough for about 1 hour.
4. Once chilled, remove the dough from the fridge. Preheat the oven to 350F and line baking sheet with parchment paper.
5. Roll the dough out to 1/4 inch thick and cut the dough into shapes of your likeness. Place them on prepared sheet pans and bake for 11-12 minutes, or until lightly golden brown.
6. Remove and let them cool completely. Drizzle some melted chocolate and enjoy!
