Garlic Za’atar Butter Pumpkin Dinner Rolls

These Garlic Za’atar Butter Pumpkin Dinner Rolls are light and fluffy, perfect as a side for dinner or for enjoying on their own. Made with pumpkin puree and a flavorful garlic butter spread, these rolls elevate any meal.
1: Mix all poolish ingredients and let it ferment for 3-4 hours at 80F.
2: Using a stand mixer with a dough hook, add in all the bread ingredients plus poolish (except butter) and mix at medium speed for about 5 minutes until a rough dough forms.
3: Add in the softened butter and knead for about 20 minutes until dough stretches well and passes the window pane test. Cover and let it rise to double in size (about 1 hour at 80F).
4: Once risen, punch the dough to let the air out, divide it into 9 equal weights, roll and shape, then place them in a lined 8x8 inch square pan. Cover and let it rise until almost 80% full.
5: Brush the top of the dough with egg wash.
6: To make the garlic butter spread, in a saucepan add butter, garlic, and zaatar seasoning, heat until butter is melted and set aside.
7: Preheat the oven to 360F and bake for 22-25 minutes or until golden brown.
8: Once baked, immediately brush the tops of the buns with garlic butter, remove from the tin, and serve warm.
