The flavor combo of oranges and tea go so well together, perfect to try this recipe especially when the citrus season is still going strong. Using @lifewaykefir Plain Kefir really adds moisture and tenderness to this loaf!
1. Preheat the oven to 350F. Line a 9x5 baking pan with parchment paper, allowing it to hang over the sides for easy removal.
2. In a bowl, mix together flour, baking powder, baking soda, salt and grounded earl grey tea leaves.
3. In a separate bowl, whisk together eggs and sugar until it's pale yellow in color. Add in oil and mix well. Add in kefir, orange juice, orange zest and mix well.
4. Gradually fold in the flour mixture to the wet mixture until it's well incorporated.
5. Pour the batter to the prepared pan and bake for about 50 minutes or until an inserted toothpick comes out clean.
6. Remove from the oven and let the loaf cool in the pan for about 10 minutes before removing it from the pan to cool completely.
7. To make the glaze, sift the powdered sugar into a bowl and mix in the blood orange juice until well combined. You can add more powdered sugar if you prefer a thicker consistency. Make sure the loaf is completely cooled before pouring the glaze over. Slice and enjoy it with a cup of tea!
