Durian Ice Cream

Raise your hand if you are ready for ice cream season! Well this one is pretty exotic because it’s Durian Ice Cream. I have tested a few times on different ice cream base, and this is my fav ratio so far. You can literally add anything you want with this ice cream base. And my fav is still churning the ice cream because it gives a much better texture and consistency in the ice cream!

What you need

tsp vanilla bean paste

tbsp cane sugar

egg yolk

cup milk
Instructions
1. Freeze your ice cream maker bowl. 2. In a bowl, whisk the egg yolk, sugar and vanilla bean paste. 3. On a stove top, heat up milk and cream until it starts to simmer. 4. Scoop 1/4 cup of milk mixture to the egg mixture and whisk to temper the egg. Pour the mixture back to the pot and continue to stir and heat up. It’s ready when the back of a spoon is coated well with the mixture. 5. Let the mixture cool completely and chill for at least 4 hours. 6.
