A simple treat that you can make and enjoy all year round. You can add different layers of mousse flavor or remember those cake tops that you slice away to your cake? Crumble them and add them as layers to jazz it up!
1. In a bowl, whisk together egg yolks and sugar until pale yellow in color. Add in corn starch and mix well.
2. In a separate bowl, mix in gelatin powder and water and let it bloom for about 5 minutes.
3. In a pot, add in milk and warm it up until just before it starts to simmer. Gradually add the warm milk to the egg yolk mixture and stir it immediately (to temper the egg yolks).
4. Pour the egg milk mixture back into the pot. Over low heat, cook the mixture until it starts to thicken.
5. Remove from heat and add in instant coffee powder and mix well. Then add in the gelatin mixture until it's completely dissolved. Set aside to let it cool.
6. In a stand mixer with a whisk attachment, whisk the whipping cream until medium peak.
7. Fold in the cream to the coffee mixture until well combined.
8. Pour the mixture into individual jars, chill for about 4 hours and there you can enjoy this coffee mousse!
