Chocolate Orange Checkered Cookies

1: In a stand mixer with a paddle attachment, cream butter and sugar until light and creamy.
2: Add in 1 egg yolk, vanilla, and orange zest and mix well.
3: Divide the batter into 2 separate bowls equally.
4: In one bowl, add in 100g of flour and mix until it forms a dough. Transfer it to cling wrap and shape it into a rectangle with 0.5cm thickness.
5: In another bowl with remaining butter mixture, add in 95g flour and 10g cocoa powder and mix until it forms a dough. Transfer it to cling wrap and shape it into a rectangle with 0.5cm thickness.
6: Place both doughs into the refrigerator and chill for 30 minutes.
7: Once chilled, cut both doughs into long strips with 1cm width.
8: Beat 1 egg white and use it as glue to stack different dough together, alternating colors for at least 3 layers.
9: Wrap the log of dough in cling wrap and chill for at least 3 hours.
10: Preheat oven to 340F. Line a baking sheet with parchment paper.
11: Slice the cookie dough into 1cm thick and place them on the sheet.
12: Bake for about 15-18 mins, then allow them to cool completely before serving.
